Braised Sausage, Potato & Carrot Skillet
A hearty one-pan dish with tender vegetables and savory sausage in a flavorful broth
Servings: 4-6
Ingredients
Vegetables & Aromatics:
- 8-10 small yellow potatoes (halved)
- 2-3 large carrots (3/4" chunks)
- 1/2 medium yellow onion (diced)
- 5 garlic cloves (minced)
- Fresh parsley (minced, for garnish)
Protein & Fats:
- 1 Italian sausage (about 4 oz, casing removed)
- 1/2 tablespoon olive oil
- 1 tablespoon butter
Liquids & Seasonings:
- 2 cups braising liquid (vegetable is best)
- 1 teaspoon Italian Seasoning (i like Trader Joe's Sofrito)
- Ground black pepper (to taste, for garnish)
Instructions
Prep Work
- Peel and chop carrots (3/4" chunks)
- Cut potatoes in half (minimum 1" thickness)
- Dice onion
- Mince garlic
- Mince parsley (set aside for garnish)
Prepare Braising Liquid
- Bring your liquid to a strong simmer
- Add minced garlic
- Remove from heat, set aside
Cook the Sausage
- Heat a large, wide pan with lid to medium-high heat
- Add sausage (no casing) fully cook until browned
- Remove sausage, chop and set aside
- Leave those sausage drippings in the pan!
Build the Dish
- Add olive oil to sausage drippings.
- Add onions, sauté for 3 minutes
- Add carrot chunks, sauté for 7 more minutes
- Pour in braising liquid and 1 tsp of seasoning mix
- Gently boil for 10 minutes (stir gently)
- Reduce heat to medium-low
- Add potatoes, cut side down (ensure bottom half of each potato is submerged in liquid)
- Cover pan and simmer 20-25 minutes
- Check potatoes for doneness by piercing with a fork
Finish & Serve
- Drain the leftover braising liquid (save this flavorful broth concentrate)
- Add butter, parsley and sausage to the pan
- Cover and let rest for 5 minutes so the flavors can meld
- Stir and serve (add ground pepper to taste)
Cook's Notes
- The drained braising liquid is a concentrated flavor bomb! Use it in a soup or rice dish for instant boost.
- Any type of sausage works as long as it renders those flavorful fat drippings.
- Trader Joes Sofrito is my favorite, if unavailable use any combination of dried herb for seasoning: rosemary, thyme, basil, oregano, marjorum (combined to equal 1 teaspoon).
