Braised Sausage, Potato & Carrot Skillet

Instructions

Prep Work

  1. Peel and chop carrots (3/4" chunks)
  2. Cut potatoes in half (minimum 1" thickness)
  3. Dice onion
  4. Mince garlic
  5. Mince parsley (set aside for garnish)

Prepare Braising Liquid

  1. Bring your liquid to a strong simmer
  2. Add minced garlic
  3. Remove from heat, set aside

Cook the Sausage

  1. Heat a large, wide pan with lid to medium-high heat
  2. Add sausage (no casing) fully cook until browned
  3. Remove sausage, chop and set aside
  4. Leave those sausage drippings in the pan!

Build the Dish

  1. Add olive oil to sausage drippings.
  2. Add onions, sauté for 3 minutes
  3. Add carrot chunks, sauté for 7 more minutes
  4. Pour in braising liquid and 1 tsp of seasoning mix
  5. Gently boil for 10 minutes (stir gently)
  6. Reduce heat to medium-low
  7. Add potatoes, cut side down (ensure bottom half of each potato is submerged in liquid)
  8. Cover pan and simmer 20-25 minutes
  9. Check potatoes for doneness by piercing with a fork

Finish & Serve

  1. Drain the leftover braising liquid (save this flavorful broth concentrate)
  2. Add butter, parsley and sausage to the pan
  3. Cover and let rest for 5 minutes so the flavors can meld
  4. Stir and serve (add ground pepper to taste)
